'not gonna lie, the people that can afford these items through the gem store must be hardcore dungeon farmers or making 100k/yr in real life

Why assume that ArenaNet bases their sales and prices around the gold-gem trade?
I think Arenanet need to look at doing deals on the price of Gems, rather than always on the items in the store and maybe some more options when it comes to how many gems you want, for instance its £8 for 800 gems (so £1 per 100 gems ofc) and i'd be much more willing to spend like £2 or £4 occasionally rather than £8

I get that its not much less but I don't see why it isn't easy enough for Arenanet to do and might help sales of Gems (not to say sales are bad, I've no idea.)

The problem with this is that they wouldn't want people to feel like they should wait to buy the gems when they are reduced in price. If there is never a sale on gems, no one will say "I'd like some gems now, but I'll just wait for them to be on sale again".
